Quick & Easy Pasta Bake

After living off of tea, toast and takeout for the past few days I decided to get into the kitchen and prepare a nice pasta dinner for my nonna and I.
Now, I know what you are thinking, Pasta + Nonna = Recipe for disaster.
But, mine is pretty forgiving and I do get props for trying
[I lose points by using bought pasta...and canned tomatoes...and frozen spinach - but hey, it's a quick N easy meal!]


What you will need:
2 Cups Wholemeal Penne
1 Chicken Breast Fillet, cut into small pieces
2 Rashers Bacon
1 packet frozen Spinach
1 small tub Ricotta
1 Can Crushed Tomatoes
1 Clove Garlic, crushed
Pinch of Salt
Pinch of Chilli flakes
Small bunch of chopped Basil, Rosemary and Oregano
[You can use dried, a teaspoon of each]
Cheese [Your choice, I like either freshly grated Mozarella or Parmesan]

Preheat oven to 180 degrees.

Sauce:
In a saucepan, combine the Tomatoes, Garlic, Salt, Chilli, Basil, Rosemary and Oregano
Leave to simmer on a low heat

Cook Pasta in boiling salted water [Follow the intructions on the packet]

In a non stick pan, over medium heat, add the chicken, before turning add bacon.
Once both cooked through, remove from pan and slice.

Drain pasta and place in a greased ovenproof dish, add spinach & ricotta and combine well.
Add chicken & bacon and stir.
Pour sauce over the top and sprinkle cheese.

Bake in oven for 15-20 minutes, or until cheese is golden.

Okay, so for those of you who don't know my grandparents, taking photos of food before you eat it is considered incredibly weird.

So, here is what this yummy bake looks like for lunch the next day - Nonna loved this so much this was all that was left...
