Recipe: Never Fail Muffins

Sick of spending money on breakfast?

Well, I know that money is better spent on gloss, goss and shoes.

I am no 5 star chef, in fact, I literally learnt to boil water about a year ago.
So baking was WAY out of my league.

So here is my "Never-Fail" muffin recipe.
[Trust me, unless you forget about them in the oven, you cannot screw this up]

This is a basic wholemeal recipe, you can play with flavours, or scroll to the bottom for my fav options.



The "Dreaming of Verona" Never-Fail Muffin. [Makes 10-12 muffins]


2 cups wholemeal self-raising flour 
2 eggs [or egg substitute]
1 cup soy milk 
1/4 cup vegetable oil


1. Beat eggs, then add milk and oil
2. Combine wet ingredients to flour and mix until well combined
3. Spoon into lightly greased muffin tins [or into muffin cases]
4. Bake at 180 degrees for 15-20 minutes [Insert a skewer into centre of muffin, if it comes out clean, muffins are cooked]

Now, for the fun stuff.
Add any of these combos at step 2 for some yummy muffin variations

- Garlic, Parmesan and grated Zucchini 
- Juice of one lemon + grated rind
- 1 teaspoon Vanilla essence
- 1 grated apple, pinch of cinnamon + 1/4 cup roughly chopped walnuts
- Finely chopped sun-dried tomato, crumbled feta and finely shredded baby spinach 


And now you have breakfast or lunch for work sorted for the week, you have now saved enough to splurge on something special, just for you!


Please note: Since there is no sugar in the "base" recipe, you will need to remember to add some of the fun extras.

  1. I use almost that same recipe but with cows milk and put in garlic, spinach and fetta. Preston loves them :)
